To make this dish at home by prescription from the author Gomer would need: 2 tbsp Pataks Hot Mango Pickle, 2 tbsp fresh lemon juice, 1 tbsp chopped fresh coriander leaves, 500g chicken tenderloins, 1 tbsp sesame seeds , 1-2 tbsp olive oil, 1/2 baby red cabbage, finely sliced, 1/2 baby white cabbage, finely sliced , 2 shallots, trimmed, diagonally sliced, 1 carrot, peeled, cut into matchsticks, 1 1/2 tbsp Neil Perry Fresh Soy & Chilli Dressing.
Ingredients:
- 2 tbsp Pataks Hot Mango Pickle
- 2 tbsp fresh lemon juice
- 1 tbsp chopped fresh coriander leaves
- 500g chicken tenderloins
- 1 tbsp sesame seeds
- 1-2 tbsp olive oil
- 1/2 baby red cabbage, finely sliced
- 1/2 baby white cabbage, finely sliced
- 2 shallots, trimmed, diagonally sliced
- 1 carrot, peeled, cut into matchsticks
- 1 1/2 tbsp Neil Perry Fresh Soy & Chilli Dressing
Instructions
- Combine the pickle, lemon juice and coriander leaves. In a ceramic or glass dish add the chicken and toss to coat.
- Cook the sesame seeds in a large non-stick frying pan for 5 minutes or until toasted. Transfer to a plate.
- Heat oil in pan over a medium-high heat. In batches, cook chicken for 2 minutes each side or until cooked through. Set aside.
- Add the cabbage, shallots and carrot to the pan and toss for 2 minutes or until just warmed through. Add dressing and remove from the heat.
- To serve, divide the cabbage salad among serving plates. Top with the chicken and sprinkle with the sesame seeds.
