To make this dish at home by prescription from the author Gomer would need: 2 tbsp Pataks Hot Mango Pickle, 2 tbsp fresh lemon juice, 1 tbsp chopped fresh coriander leaves, 500g chicken tenderloins, 1 tbsp sesame seeds , 1-2 tbsp olive oil, 1/2 baby red cabbage, finely sliced, 1/2 baby white cabbage, finely sliced , 2 shallots, trimmed, diagonally sliced, 1 carrot, peeled, cut into matchsticks, 1 1/2 tbsp Neil Perry Fresh Soy & Chilli Dressing.

Ingredients:

  • 2 tbsp Pataks Hot Mango Pickle 
  • 2 tbsp fresh lemon juice 
  • 1 tbsp chopped fresh coriander leaves 
  • 500g chicken tenderloins 
  • 1 tbsp sesame seeds 
  • 1-2 tbsp olive oil 
  • 1/2 baby red cabbage, finely sliced 
  • 1/2 baby white cabbage, finely sliced 
  • 2 shallots, trimmed, diagonally sliced 
  • 1 carrot, peeled, cut into matchsticks 
  • 1 1/2 tbsp Neil Perry Fresh Soy & Chilli Dressing 

Instructions

  1. Combine the pickle, lemon juice and coriander leaves. In a ceramic or glass dish add the chicken and toss to coat.
  2. Cook the sesame seeds in a large non-stick frying pan for 5 minutes or until toasted. Transfer to a plate.
  3. Heat oil in pan over a medium-high heat. In batches, cook chicken for 2 minutes each side or until cooked through. Set aside.
  4. Add the cabbage, shallots and carrot to the pan and toss for 2 minutes or until just warmed through. Add dressing and remove from the heat.
  5. To serve, divide the cabbage salad among serving plates. Top with the chicken and sprinkle with the sesame seeds.
