Warm witlof, prosciutto and orange salad

Crisp witlof is delicious with a sweet orange dressing and salty prosciutto.

To make this dish at home by prescription from the author Gomer would need: 2 tsp extra virgin olive oil, 6 slices prosciutto, torn, 1 tbsp white wine vinegar, 2 tsp honey, 1 tsp wholegrain mustard , 2 oranges, peeled, cut into segments, 4 witlof, leaves separated, 1/3 cup fresh continental parsley leaves .
Ingredients:
- 2 tsp extra virgin olive oil
- 6 slices prosciutto, torn
- 1 tbsp white wine vinegar
- 2 tsp honey
- 1 tsp wholegrain mustard
- 2 oranges, peeled, cut into segments
- 4 witlof, leaves separated
- 1/3 cup fresh continental parsley leaves
Instructions
- Heat the oil in a non-stick frying pan over medium-high heat. Cook the prosciutto, in 2 batches, for 1-2 minutes each side or until golden and crisp. Transfer to a plate lined with paper towel.
- Remove the pan from heat. Carefully add vinegar, honey and mustard. Stir in the orange segments. Place the pan over low heat and cook, stirring occasionally, for 1-2 minutes or until the mixture is warmed through.
- Arrange the witlof in a dish. Pour over the orange mixture. Tear the prosciutto into small pieces. Add the prosciutto to the witlof mixture. Sprinkle with the parsley.
