Warm witlof, prosciutto and orange salad

Crisp witlof is delicious with a sweet orange dressing and salty prosciutto.

To make this dish at home by prescription from the author Gomer would need: 2 tsp extra virgin olive oil, 6 slices prosciutto, torn, 1 tbsp white wine vinegar, 2 tsp honey, 1 tsp wholegrain mustard , 2 oranges, peeled, cut into segments, 4 witlof, leaves separated, 1/3 cup fresh continental parsley leaves .

Ingredients:

  • 2 tsp extra virgin olive oil 
  • 6 slices prosciutto, torn 
  • 1 tbsp white wine vinegar 
  • 2 tsp honey 
  • 1 tsp wholegrain mustard 
  • 2 oranges, peeled, cut into segments 
  • 4 witlof, leaves separated 
  • 1/3 cup fresh continental parsley leaves 

Instructions

  1. Heat the oil in a non-stick frying pan over medium-high heat. Cook the prosciutto, in 2 batches, for 1-2 minutes each side or until golden and crisp. Transfer to a plate lined with paper towel.
  2. Remove the pan from heat. Carefully add vinegar, honey and mustard. Stir in the orange segments. Place the pan over low heat and cook, stirring occasionally, for 1-2 minutes or until the mixture is warmed through.
  3. Arrange the witlof in a dish. Pour over the orange mixture. Tear the prosciutto into small pieces. Add the prosciutto to the witlof mixture. Sprinkle with the parsley.
