Ingredients:
- 2 cups firmly packed fresh continental parsley leaves
- 45g pine nuts
- 1/2 red onion, thinly sliced
- 2 tbsp currants
- 1 1/2 tbsp extra virgin olive oil
- 3 tsp red wine vinegar
Instructions
- Combine the parsley, pine nuts, onion and currants in a bowl. Season with salt and pepper.
- Add the oil and vinegar and toss gently to combine.
