Ingredients:

  • 2 cups firmly packed fresh continental parsley leaves 
  • 45g pine nuts 
  • 1/2 red onion, thinly sliced 
  • 2 tbsp currants 
  • 1 1/2 tbsp extra virgin olive oil 
  • 3 tsp red wine vinegar 

Instructions

  1. Combine the parsley, pine nuts, onion and currants in a bowl. Season with salt and pepper.
  2. Add the oil and vinegar and toss gently to combine.
