To make this dish at home by prescription from the author Gomer would need: 3 Primo Classic Chorizo, sliced, 80g baby rocket leaves, 1 red capsicum, seeded and chopped, 400g can fourbean mix, rinsed and drained, 2 tbsp olive oil , 1 tbsp red wine vinegar .

Ingredients:

  • 3 Primo Classic Chorizo, sliced 
  • 80g baby rocket leaves 
  • 1 red capsicum, seeded and chopped 
  • 400g can fourbean mix, rinsed and drained 
  • 2 tbsp olive oil 
  • 1 tbsp red wine vinegar 

Instructions

  1. Heat a large non-stick frying pan over medium-high heat. Cook chorizo for 3 minutes, turning regularly, until dark golden and slightly crisp. Remove, drain on paper towel and keep warm.
  2. Place olive oil, vinegar, salt and pepper in a non-metallic bowl, and whisk to combine.
  3. Place chorizo in a serving dish. Add four-bean mix, capsicum and rocket. Drizzle with dressing and serve with crusty bread.
