To make this dish at home by prescription from the author Gomer would need: 100g prosciutto, 150g Coles brand baby spinach leaves, 100g soft blue cheese, chopped, 1 tbsp chopped walnuts, 50g butter , 2 packham or william pears, cored, cut into wedges, 2 tbsp brown sugar, 1 tsp vanilla extract .

Ingredients:

  • 100g prosciutto 
  • 150g Coles brand baby spinach leaves 
  • 100g soft blue cheese, chopped 
  • 1 tbsp chopped walnuts 
  • 50g butter 
  • 2 packham or william pears, cored, cut into wedges 
  • 2 tbsp brown sugar 
  • 1 tsp vanilla extract 

Instructions

  1. Preheat oven to 180C or 160C fan-forced. Line a baking pan with baking paper. Lay prosciutto on prepared tray. Bake for 5 mins, or until crisp.
  2. Meanwhile, caramelise pears. Melt butter in a frying pan on medium heat. Cook pears for 4-5 mins, swirling pan, or until tender and golden. Add sugar and vanilla and cook for another 2-3 mins, or until caramelised.
  3. Place spinach on a platter. Break up prosciutto and scatter over spinach. Top with caramelised pears, blue cheese and walnuts. Drizzle over pan juices from pears. Gently toss to combine.
