Green bean and cherry tomato salad

Sunflower and sesame seeds add delightful crunch and flavour to this tasty green bean salad.

To make this dish at home by prescription from the author Gomer would need: 800g green beans, 250g cherry tomatoes, halved, 1 small red onion, finely chopped, 40g sunflower seed kernels, 1 tbsp sesame seeds , 2 tbsp chopped fresh continental parsley leaves, 80mls olive oil, 2 tbsp balsamic vinegar , 2 tsp wholegrain mustard, 1 garlic clove, crushed, Salt & ground black pepper, to taste.
Ingredients:
- 800g green beans
- 250g cherry tomatoes, halved
- 1 small red onion, finely chopped
- 40g sunflower seed kernels
- 1 tbsp sesame seeds
- 2 tbsp chopped fresh continental parsley leaves
- 80mls olive oil
- 2 tbsp balsamic vinegar
- 2 tsp wholegrain mustard
- 1 garlic clove, crushed
- Salt & ground black pepper, to taste
Instructions
- Bring a large saucepan of salted water to the boil over high heat. Add the beans and cook for 2 minutes or until bright green and tender crisp. Drain and refresh in iced water. Drain and place in a large bowl. Add the tomatoes, onion, sunflower kernels, sesame seeds and parsley. Toss to combine.
- To make the dressing, place the oil, vinegar, mustard, garlic, salt and pepper in a small screw-top jar. Shake to combine.
- To serve, pour the dressing over the salad and toss to combine.
