Green bean and cherry tomato salad

To make this dish at home by prescription from the author Gomer would need: 800g green beans, 250g cherry tomatoes, halved, 1 small red onion, finely chopped, 40g sunflower seed kernels, 1 tbsp sesame seeds , 2 tbsp chopped fresh continental parsley leaves, 80mls olive oil, 2 tbsp balsamic vinegar , 2 tsp wholegrain mustard, 1 garlic clove, crushed, Salt & ground black pepper, to taste.

Ingredients:

  • 800g green beans 
  • 250g cherry tomatoes, halved 
  • 1 small red onion, finely chopped 
  • 40g sunflower seed kernels 
  • 1 tbsp sesame seeds 
  • 2 tbsp chopped fresh continental parsley leaves 
  • 80mls olive oil 
  • 2 tbsp balsamic vinegar 
  • 2 tsp wholegrain mustard 
  • 1 garlic clove, crushed 
  • Salt & ground black pepper, to taste 

Instructions

  1. Bring a large saucepan of salted water to the boil over high heat. Add the beans and cook for 2 minutes or until bright green and tender crisp. Drain and refresh in iced water. Drain and place in a large bowl. Add the tomatoes, onion, sunflower kernels, sesame seeds and parsley. Toss to combine.
  2. To make the dressing, place the oil, vinegar, mustard, garlic, salt and pepper in a small screw-top jar. Shake to combine.
  3. To serve, pour the dressing over the salad and toss to combine.
