This classic Japanese spinach salad combines nutty sesame seeds with spinach for added flavour.

To make this dish at home by prescription from the author Gomer would need: 40g sesame seeds, toasted, 1 tbsp soy sauce, 2 tsp sushi seasoning, 2 tsp caster sugar, 2 tbsp warm water , 1 bunch English spinach, trimmed .

Ingredients:

  • 40g sesame seeds, toasted 
  • 1 tbsp soy sauce 
  • 2 tsp sushi seasoning 
  • 2 tsp caster sugar 
  • 2 tbsp warm water 
  • 1 bunch English spinach, trimmed 

Instructions

  1. Process the sesame seeds in a food processor until coarsely chopped. Add the soy sauce, sushi seasoning and sugar. Process to combine. Transfer to a bowl. Stir in the water. Cover with plastic wrap and set aside for 1 hour to develop the flavours.
  2. Cook the spinach in a large saucepan of salted boiling water for 1-2 minutes or until tender. Drain. Transfer to a bowl of iced water to refresh. Drain and squeeze to remove excess liquid. Coarsely chop spinach. Transfer to a serving bowl. Add sesame seed mixture and toss to combine.
