Spiced carrot salad with honey & orange blossom dressing

The carrots are both sweet and spicy in this exotic salad.

To make this dish at home by prescription from the author Gomer would need: 8 carrots, peeled, thickly sliced diagonally, 1 tbsp finely chopped fresh coriander, 1 tbsp finely chopped fresh continental parsley, 1 tbsp finely chopped fresh mint, 1 tsp ground sweet paprika , 1 tsp ground cumin, 1 tsp ground coriander, 1/4 tsp dried chilli flakes , 2 tbsp honey, 1 tbsp olive oil, 2 tsp fresh lemon juice, 1/2 tsp orange blossom water.
Ingredients:
- 8 carrots, peeled, thickly sliced diagonally
- 1 tbsp finely chopped fresh coriander
- 1 tbsp finely chopped fresh continental parsley
- 1 tbsp finely chopped fresh mint
- 1 tsp ground sweet paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp dried chilli flakes
- 2 tbsp honey
- 1 tbsp olive oil
- 2 tsp fresh lemon juice
- 1/2 tsp orange blossom water
Instructions
- Cook the carrot in a large saucepan of salted boiling water for 6-8 minutes or until tender. Refresh under cold running water. Drain well.
- Meanwhile to make the honey & orange blossom dressing, combine the paprika, cumin, ground coriander and chilli in a frying pan over high heat and cook, stirring, for 30 seconds or until aromatic. Remove from heat. Add the honey, oil, lemon juice and orange blossom water and stir to combine.
- Place the carrot in a serving bowl. Pour over the dressing and toss until well combined. Season with salt and pepper. Cover and place in the fridge for 2 hours to develop the flavours.
- Add the fresh coriander, parsley and mint to the salad and gently toss until just combined. Serve immediately.
