To make this dish at home by prescription from the author sheff would need: 1kg beef bones, 4L water, 1 brown onion, halved, coarsely chopped, 4 whole star anise, 2 x 7cm cinnamon sticks , 6cm-piece fresh ginger, peeled, thickly sliced, 4 whole cloves, 4 green cardamom pods , 250g rice stick noodles, 2 tbsp fresh lime juice, 1 tbsp fish sauce, 2 beef fillet steaks, thinly sliced across the grain, 4 green shallots, ends trimmed, thinly sliced diagonally, 110g bean sprouts, 1 fresh red birdseye chilli, thinly sliced diagonally, 1/2 cup fresh coriander leaves.

Ingredients:

  • 1kg beef bones 
  • 4L water 
  • 1 brown onion, halved, coarsely chopped 
  • 4 whole star anise 
  • 2 x 7cm cinnamon sticks 
  • 6cm-piece fresh ginger, peeled, thickly sliced 
  • 4 whole cloves 
  • 4 green cardamom pods 
  • 250g rice stick noodles 
  • 2 tbsp fresh lime juice 
  • 1 tbsp fish sauce 
  • 2 beef fillet steaks, thinly sliced across the grain 
  • 4 green shallots, ends trimmed, thinly sliced diagonally 
  • 110g bean sprouts 
  • 1 fresh red birdseye chilli, thinly sliced diagonally 
  • 1/2 cup fresh coriander leaves 
  • 1/2 cup fresh Vietnamese mint leaves 

Instructions

  1. Combine the beef bones, water, onion, star anise, cinnamon, ginger, cloves and cardamom in a large saucepan and bring to the boil over high heat. Reduce heat to low and simmer, skimming the surface with a slotted spoon occasionally to remove any scum that rises to the surface, for 2 hours or until reduced by half. Set aside for 10 minutes to cool slightly. Strain the beef stock through a fine sieve into a clean saucepan. Discard solids.
  2. Place the noodles in a heatproof bowl and cover with boiling water. Set aside for 5 minutes to soften. Stir with a fork to separate. Drain.
  3. Place the stock over high heat and cook for 5 minutes or until hot. Add the lime juice and fish sauce. Add the beef fillet steak and half the green shallot and stir until just combined.
  4. Divide the noodles among serving bowls. Ladle over the hot stock mixture. Top with the bean sprouts, chilli, coriander, mint and remaining green shallot to serve.
