Lower-GI ham and red lentil soup

Lower GI - but not in flavour - this soup of ham and red lentils is a one pot wonder.

To make this dish at home by prescription from the author sheff would need: 1 tbsp olive oil, 1 medium brown onion, finely chopped, 2 medium carrots, peeled, chopped, 3 celery stalks, finely chopped, 2 garlic cloves, crushed , 2 litres salt-reduced chicken stock, 100g piece leg ham, 1 cup red lentils, rinsed, drained , 1/4 cup fresh flat-leaf parsley leaves, chopped.
Ingredients:
- 1 tbsp olive oil
- 1 medium brown onion, finely chopped
- 2 medium carrots, peeled, chopped
- 3 celery stalks, finely chopped
- 2 garlic cloves, crushed
- 2 litres salt-reduced chicken stock
- 100g piece leg ham
- 1 cup red lentils, rinsed, drained
- 1/4 cup fresh flat-leaf parsley leaves, chopped
Instructions
- Heat oil in a large saucepan over medium heat. Add onion, carrots, celery and garlic. Cook, stirring, for 5 minutes or until onion has softened.
- Increase heat to high. Add stock. Bring to the boil. Reduce heat to medium. Add ham and lentils. Simmer for 20 to 30 minutes or until lentils are tender.
- Remove ham from pan. Using a fork, shred ham. Return to soup. Cook for 2 minutes or until heated through. Stir in parsley. Season with pepper. Serve.
