Lower-GI ham and red lentil soup

Lower GI - but not in flavour - this soup of ham and red lentils is a one pot wonder.

To make this dish at home by prescription from the author sheff would need: 1 tbsp olive oil, 1 medium brown onion, finely chopped, 2 medium carrots, peeled, chopped, 3 celery stalks, finely chopped, 2 garlic cloves, crushed , 2 litres salt-reduced chicken stock, 100g piece leg ham, 1 cup red lentils, rinsed, drained , 1/4 cup fresh flat-leaf parsley leaves, chopped.

Ingredients:

  • 1 tbsp olive oil 
  • 1 medium brown onion, finely chopped 
  • 2 medium carrots, peeled, chopped 
  • 3 celery stalks, finely chopped 
  • 2 garlic cloves, crushed 
  • 2 litres salt-reduced chicken stock 
  • 100g piece leg ham 
  • 1 cup red lentils, rinsed, drained 
  • 1/4 cup fresh flat-leaf parsley leaves, chopped 

Instructions

  1. Heat oil in a large saucepan over medium heat. Add onion, carrots, celery and garlic. Cook, stirring, for 5 minutes or until onion has softened.
  2. Increase heat to high. Add stock. Bring to the boil. Reduce heat to medium. Add ham and lentils. Simmer for 20 to 30 minutes or until lentils are tender.
  3. Remove ham from pan. Using a fork, shred ham. Return to soup. Cook for 2 minutes or until heated through. Stir in parsley. Season with pepper. Serve.
