To make this dish at home by prescription from the author sheff would need: 1 bunch shallots, thinly sliced, 1 bunch celery, leaves included, finely sliced, 3 small green capsicum, finely chopped, 3 medium tomatoes, finely chopped, 4 large carrots, finely chopped , 300g green beans, trimmed, chopped, 30g packet Vegetable Soup mix, 2 cups water , 3 cups chicken stock, 2 x 810g cans crushed tomatoes.

Ingredients:

  • 1 bunch shallots, thinly sliced 
  • 1 bunch celery, leaves included, finely sliced 
  • 3 small green capsicum, finely chopped 
  • 3 medium tomatoes, finely chopped 
  • 4 large carrots, finely chopped 
  • 300g green beans, trimmed, chopped 
  • 30g packet Vegetable Soup mix 
  • 2 cups water 
  • 3 cups chicken stock 
  • 2 x 810g cans crushed tomatoes 

Instructions

  1. Combine ingredients in a large saucepan. Bring to the boil. Reduce heat. Simmer, covered, for 20 minutes or until vegetables are tender. Season with salt and pepper.
