Ingredients:
- 750g jap pumpkin, peeled, deseeded
- 3 eggs, separated
- 1/2 cup milk
- 1/2 cup grated tasty cheese
- 1/4 tsp ground nutmeg
Instructions
- Preheat oven to 180°C. Lightly grease a 4-cup capacity pudding basin.
- Cut pumpkin into cubes. Place into a saucepan. Cover with water. Bring to the boil over high heat. Reduce heat to medium. Simmer for 15 minutes or until tender. Drain. Return to saucepan over low heat, shaking pan gently until any remaining water evaporates. Mash.
- Whisk together egg yolks, milk, cheese, nutmeg, and salt and pepper in a large bowl. Stir in pumpkin.
- Using an electric mixer, beat eggwhites to soft peaks. Fold into pumpkin mixture. Spoon into basin. Bake for 30 minutes or until set. Serve.
