Ingredients:

  • 125g Reggiano parmesan cheese, finely grated 
  • 1/4 cup walnuts, finely chopped 

Instructions

  1. Preheat oven to 180°C. Line 2 baking trays with non-stick baking paper. Draw 12 x 6cm circles on each sheet of paper.
  2. Sprinkle cheese onto circles, making sure cheese isn't too thick. Sprinkle with walnuts. Bake, 1 tray at a time, for 15 to 20 minutes or until cheese is melted and golden.
  3. Cool completely on baking trays. Use a palate knife to remove wafers. Serve with pre-dinner drinks and olives.
