Ingredients:

  • 4cm piece fresh ginger, peeled, sliced 
  • 2 cinnamon sticks 
  • 2 tbsp honey 

Instructions

  1. Place ginger, cinnamon and 4 cups cold water in a saucepan over high heat. Cover. Bring to the boil. Reduce heat to low. Simmer, uncovered, for 5 minutes for flavours to develop.
  2. Strain mixture into a heatproof jug. Add honey. Stir to combine. Set aside for 10 minutes or until slightly cooled. Serve.
