Ingredients:
- 300g pitted cherries, fresh or frozen
- 1/2 cup Coles caster sugar
- 750ml non vintage champagne or sparkling white wine
Instructions
- Place cherries, sugar and 1/ 4 cup water in a small saucepan. Simmer on low heat for 8-10 mins, or until cherries are soft and liquid is syrupy. Allow to cool.
- Transfer to a blender and blend until smooth. Strain through a fine sieve, discard solids, and refrigerate syrup until ready to use.
- To serve, place 1 tablespoon of syrup in each champagne flute and top with champagne.
