This refreshing Vietnamese cooler provides the perfect start to an Asian-style banquet.

Ingredients:

  • 2 stalks lemongrass , sliced 
  • 6cm piece fresh ginger, sliced 
  • 3/4 cup caster sugar 
  • Ice cubes and lemongrass stalks , to serve 

Instructions

  1. Place lemongrass, ginger and sugar in a saucepan. Add 8 cups cold water. Bring to the boil over high heat. Reduce heat to low. Simmer for 15 minutes. Set aside for 30 minutes to cool. Transfer mixture to an airtight container. Refrigerate until chilled.
  2. Strain lemongrass mixture through a fine sieve in a large jug. Discard solids. Place ice cubes and lemongrass stalks, if using, in glasses. Top up with lemongrass mixture. Serve.
