Ingredients:

  • 1/4 tsp baking powder 
  • Pinch of salt 
  • 40g butter 
  • 25g grated cheddar 
  • 1 tbsp dried chives 
  • 60ml cold water 
  • Plain flour, to dust 
  • 2 tsp milk, to brush 

Instructions

  1. Preheat oven to 200°C. Line a baking tray with non-stick baking paper. Sift together flour, baking powder and salt into a large bowl. Use fingers to rub in butter until mixture resembles fine breadcrumbs.
  2. Add cheddar and chives, and stir to combine. Make a well in the centre. Add water and use a round-bladed knife in a cutting motion to bring mixture together. Knead in the bowl until just smooth. Wrap in plastic wrap and set aside for 15 minutes to rest.
  3. Use a rolling pin lightly dusted in flour to roll out dough on a lightly floured surface until 2mm thick. Use a 5cm star-shaped pastry cutter (or a knife) to cut out shapes from dough. Brush with milk and place on prepared tray.
  4. Bake in preheated oven for 10 minutes or until lightly golden. Remove from oven and set aside on tray for 30 minutes to cool completely.
