To make this dish at home by prescription from the author sheff would need: 150g plain flour, 1/4 tsp baking powder, Pinch of salt, 40g butter, 25g grated cheddar , 1 tbsp dried chives, 60ml cold water, Plain flour, to dust , 2 tsp milk, to brush.
Ingredients:
- 150g plain flour
- 1/4 tsp baking powder
- Pinch of salt
- 40g butter
- 25g grated cheddar
- 1 tbsp dried chives
- 60ml cold water
- Plain flour, to dust
- 2 tsp milk, to brush
Instructions
- Preheat oven to 200°C. Line a baking tray with non-stick baking paper. Sift together flour, baking powder and salt into a large bowl. Use fingers to rub in butter until mixture resembles fine breadcrumbs.
- Add cheddar and chives, and stir to combine. Make a well in the centre. Add water and use a round-bladed knife in a cutting motion to bring mixture together. Knead in the bowl until just smooth. Wrap in plastic wrap and set aside for 15 minutes to rest.
- Use a rolling pin lightly dusted in flour to roll out dough on a lightly floured surface until 2mm thick. Use a 5cm star-shaped pastry cutter (or a knife) to cut out shapes from dough. Brush with milk and place on prepared tray.
- Bake in preheated oven for 10 minutes or until lightly golden. Remove from oven and set aside on tray for 30 minutes to cool completely.
