To make this dish at home by prescription from the author sheff would need: 1/4 cup Coles brand pure olive oil, 1 onion, chopped, 1 tsp ground cumin, 1 tsp garam masala, 1/4 tsp chilli flakes, plus extra to serve , 1 carrot, grated, 400g can butter beans, rinsed, drained, mashed, 1 tbsp tahini , 1 egg, 4 slices soy & linseed bread, made into breadcrumbs, 50g baby spinach leaves, 4 Coles bakery 7 seeds & grain rolls, split, 2 tomatoes, sliced, 1/2 avocado, sliced, 1/2 cup Coles simply less Greek style yoghurt.

Ingredients:

  • 1/4 cup Coles brand pure olive oil 
  • 1 onion, chopped 
  • 1 tsp ground cumin 
  • 1 tsp garam masala 
  • 1/4 tsp chilli flakes, plus extra to serve 
  • 1 carrot, grated 
  • 400g can butter beans, rinsed, drained, mashed 
  • 1 tbsp tahini 
  • 1 egg 
  • 4 slices soy & linseed bread, made into breadcrumbs 
  • 50g baby spinach leaves 
  • 4 Coles bakery 7 seeds & grain rolls, split 
  • 2 tomatoes, sliced 
  • 1/2 avocado, sliced 
  • 1/2 cup Coles simply less Greek style yoghurt 

Instructions

  1. Heat 1 tablespoon of oil in a frying pan over medium heat. Cook the onion, stirring occasionally, for 5-8 mins or until very soft and caramelised. Add the cumin, garam masala and chilli and cook for 30 secs until fragrant. Add the carrot and cook for 1-2 mins or until just collapsed. Set aside to cool.
  2. Stir in the beans, tahini, egg and breadcrumbs. Season. Shape into 4 patties. Chill for 5 mins.
  3. Heat the remaining oil in a frying pan over medium heat. Cook the patties for 3-5 mins each side or until golden.
  4. Lay spinach on the roll bases. Top with patties, tomato and avocado. Spoon over the yoghurt. Sprinkle with extra chilli and top with roll tops.
