- 2/3 cup coconut oil, melted
- 1/3 cup Dutch processed cocoa powder
- 1/3 cup rice malt syrup
- 1/2 cup desiccated coconut
- 4 cups whole grain puffed rice
- 1/4 cup dried goji berries, plus extra for garnish
Instructions
- Place melted coconut oil in a large mixing bowl, sift over cocoa powder into the oil and whisk well to combine.
- Add rice malt syrup to the oil and cocoa mixture and whisk well to combine.
- Stir in coconut to combine. Stir in puffed rice and goji berries and mix well to coat the rice well.
- Spoon mixture into individual cupcake patties, garnish with extra goji berries. Chill in the fridge for one hour before serving.
