Ingredients:

  • 2/3 cup coconut oil, melted 
  • 1/3 cup Dutch processed cocoa powder 
  • 1/3 cup rice malt syrup 
  • 1/2 cup desiccated coconut 
  • 4 cups whole grain puffed rice 
  • 1/4 cup dried goji berries, plus extra for garnish 

Instructions

  1. Place melted coconut oil in a large mixing bowl, sift over cocoa powder into the oil and whisk well to combine.
  2. Add rice malt syrup to the oil and cocoa mixture and whisk well to combine.
  3. Stir in coconut to combine. Stir in puffed rice and goji berries and mix well to coat the rice well.
  4. Spoon mixture into individual cupcake patties, garnish with extra goji berries. Chill in the fridge for one hour before serving.
