Feta and spinach fritters

To make this dish at home by prescription from the author Gomer would need: 4 eggs, beaten, 1/2 cup plain flour, sifted, 1/4 cup milk, 1 tsp baking powder, 100g spinach leaves, finely shredded , 2 tbsp mint leaves, chopped, 200g feta, crumbled, olive oil, for shallow frying , 200g carton light sour cream, 200g smoked salmon.

Ingredients:

  • 4 eggs, beaten 
  • 1/2 cup plain flour, sifted 
  • 1/4 cup milk 
  • 1 tsp baking powder 
  • 100g spinach leaves, finely shredded 
  • 2 tbsp mint leaves, chopped 
  • 200g feta, crumbled 
  • olive oil, for shallow frying 
  • 200g carton light sour cream 
  • 200g smoked salmon 

Instructions

  1. Combine eggs, flour, milk and baking powder in a bowl. Add spinach, mint and feta. Stir until well combined.
  2. Pour oil into a large non-stick frying pan until it is one-third full. Heat over medium heat until hot. Add heaped tablespoonfuls of fritter mixture, 2 at a time. Spread with back of a spoon to form 9cm (diameter) rounds. Cook for 2 minutes, or until golden. Turn and cook for a further 1 minute, or until cooked through. Transfer to a plate. Cover to keep warm. Repeat with remaining fritter mixture.
  3. Place 1 fritter onto each serving plate. Top with sour cream and smoked salmon. Repeat, finishing with a fritter. Season with salt and pepper. Serve with lemon wedges, if desired.
