Feta and spinach fritters

These tasty fritters will take pride of place on the brunch table.

To make this dish at home by prescription from the author Gomer would need: 4 eggs, beaten, 1/2 cup plain flour, sifted, 1/4 cup milk, 1 tsp baking powder, 100g spinach leaves, finely shredded , 2 tbsp mint leaves, chopped, 200g feta, crumbled, olive oil, for shallow frying , 200g carton light sour cream, 200g smoked salmon.
Ingredients:
- 4 eggs, beaten
- 1/2 cup plain flour, sifted
- 1/4 cup milk
- 1 tsp baking powder
- 100g spinach leaves, finely shredded
- 2 tbsp mint leaves, chopped
- 200g feta, crumbled
- olive oil, for shallow frying
- 200g carton light sour cream
- 200g smoked salmon
Instructions
- Combine eggs, flour, milk and baking powder in a bowl. Add spinach, mint and feta. Stir until well combined.
- Pour oil into a large non-stick frying pan until it is one-third full. Heat over medium heat until hot. Add heaped tablespoonfuls of fritter mixture, 2 at a time. Spread with back of a spoon to form 9cm (diameter) rounds. Cook for 2 minutes, or until golden. Turn and cook for a further 1 minute, or until cooked through. Transfer to a plate. Cover to keep warm. Repeat with remaining fritter mixture.
- Place 1 fritter onto each serving plate. Top with sour cream and smoked salmon. Repeat, finishing with a fritter. Season with salt and pepper. Serve with lemon wedges, if desired.
