Smoked salmon and rocket linguini

To make this dish at home by prescription from the author Gomer would need: 375g dried linguini, 1 tbsp olive oil, 1 red onion, halved, thinly sliced, 1 garlic clove, crushed, 175g mascarpone , 250ml thin cream, 500g smoked salmon slices, chopped, 1 x 80g pkt baby rocket leaves , 2 tbsp drained capers, chopped, 1 tbsp chopped fresh dill, Salt & freshly ground black pepper.

Ingredients:

  • 375g dried linguini 
  • 1 tbsp olive oil 
  • 1 red onion, halved, thinly sliced 
  • 1 garlic clove, crushed 
  • 175g mascarpone 
  • 250ml thin cream 
  • 500g smoked salmon slices, chopped 
  • 1 x 80g pkt baby rocket leaves 
  • 2 tbsp drained capers, chopped 
  • 1 tbsp chopped fresh dill 
  • Salt & freshly ground black pepper 

Instructions

  1. Cook pasta in a saucepan of salted boiling water following packet directions or until al dente (approx. 10 min). Drain. Return to pan.
  2. Meanwhile, heat oil in a large non-stick frying pan over medium-high heat. Add red onion and garlic and cook, stirring, for 3 minutes or until onion softens. Reduce heat to medium. Add mascarpone and cream and cook, stirring, for 2 minutes or until cream is heated through (do not allow mixture to boil).
  3. Remove from heat and add pasta, salmon, rocket, capers and dill. Taste and season with salt and pepper. Toss to combine.
  4. Divide among shallow bowls and serve immediately.
