Smoked salmon and rocket linguini

This flavourful salmon pasta dish is a healthy option for a mid-week meal.

To make this dish at home by prescription from the author Gomer would need: 375g dried linguini, 1 tbsp olive oil, 1 red onion, halved, thinly sliced, 1 garlic clove, crushed, 175g mascarpone , 250ml thin cream, 500g smoked salmon slices, chopped, 1 x 80g pkt baby rocket leaves , 2 tbsp drained capers, chopped, 1 tbsp chopped fresh dill, Salt & freshly ground black pepper.
Ingredients:
- 375g dried linguini
- 1 tbsp olive oil
- 1 red onion, halved, thinly sliced
- 1 garlic clove, crushed
- 175g mascarpone
- 250ml thin cream
- 500g smoked salmon slices, chopped
- 1 x 80g pkt baby rocket leaves
- 2 tbsp drained capers, chopped
- 1 tbsp chopped fresh dill
- Salt & freshly ground black pepper
Instructions
- Cook pasta in a saucepan of salted boiling water following packet directions or until al dente (approx. 10 min). Drain. Return to pan.
- Meanwhile, heat oil in a large non-stick frying pan over medium-high heat. Add red onion and garlic and cook, stirring, for 3 minutes or until onion softens. Reduce heat to medium. Add mascarpone and cream and cook, stirring, for 2 minutes or until cream is heated through (do not allow mixture to boil).
- Remove from heat and add pasta, salmon, rocket, capers and dill. Taste and season with salt and pepper. Toss to combine.
- Divide among shallow bowls and serve immediately.
