To make this dish at home by prescription from the author Gomer would need: 1 corn cob, husk removed, 1kg floury potatoes , peeled, 1/2 cup reduced-fat milk, 25g unsalted butter, 1 tbsp Jamaican jerk spice mix , 1 tbsp olive oil, plus a little extra to drizzle, 4 x 175g skinless salmon fillets, 200g steamed green beans, to serve .

Ingredients:

  • 1 corn cob, husk removed 
  • 1kg floury potatoes , peeled 
  • 1/2 cup reduced-fat milk 
  • 25g unsalted butter 
  • 1 tbsp Jamaican jerk spice mix 
  • 1 tbsp olive oil, plus a little extra to drizzle 
  • 4 x 175g skinless salmon fillets 
  • 200g steamed green beans, to serve 

Instructions

  1. Cook the potatoes in a pan of boiling salted water for 15 minutes until tender. Drain well and return to the pan. Meanwhile, cook corn in boiling salted water for 10 minutes or until tender. Refresh in cold water, then cut away kernels and add to pan with potato. Add milk and butter, season, then mash with a potato masher to combine. Keep warm.
  2. Combine the spice mix and oil with salt and pepper, then rub into the salmon to coat.
  3. Preheat a chargrill pan over high heat. Cook salmon for 3-4 minutes each side until lightly charred and cooked through. Rest for 3 minutes. Arrange bed of corn mash on each plate, top with salmon, then drizzle with a little olive oil and serve with steamed beans.
