Pear brings out the sweetness of parsnip in a puree to pair with pork – think bangers, cutlets or roast belly.

To make this dish at home by prescription from the author sheff would need: 6 parsnips, peeled, coarsely chopped, 1 Red Delight potato, peeled, coarsely chopped, 2 Packham or Beurre Bosc pears, peeled, cored, coarsely chopped, 4 fresh thyme sprigs, 20g Butter , 80-125ml pouring cream .

Ingredients:

  • 6 parsnips, peeled, coarsely chopped 
  • 1 Red Delight potato, peeled, coarsely chopped 
  • 2 Packham or Beurre Bosc pears, peeled, cored, coarsely chopped 
  • 4 fresh thyme sprigs 
  • 20g Butter 
  • 80-125ml pouring cream 

Instructions

  1. Place the parsnip, potato, pear and thyme in a saucepan. Cover with cold water. Cover and bring to the boil over high heat. Uncover and cook for 20 minutes or until very tender. Drain well. Discard thyme.
  2. Transfer parsnip mixture to a food processor. Add the butter and process until mixture is smooth. Gradually add enough cream to make a smooth puree.
  3. Return to the pan over low heat. Stir for 2 minutes or until heated through. Season.
