Plum and red wine relish

To make this dish at home by prescription from the author sheff would need: 6 large radiance plums, halved and stoned, 1 tbsp olive oil, 2 medium red onions, halved, thinly sliced, 1/3 cup firmly packed brown sugar, 1 cup red wine , 1/4 cup red wine vinegar, 1 cinnamon stick, 2 whole cloves , 1/2 tsp whole black peppercorns, 2 cardamom pods, bruised, 2 x 5cm strips orange rind.

Ingredients:

  • 6 large radiance plums, halved and stoned 
  • 1 tbsp olive oil 
  • 2 medium red onions, halved, thinly sliced 
  • 1/3 cup firmly packed brown sugar 
  • 1 cup red wine 
  • 1/4 cup red wine vinegar 
  • 1 cinnamon stick 
  • 2 whole cloves 
  • 1/2 tsp whole black peppercorns 
  • 2 cardamom pods, bruised 
  • 2 x 5cm strips orange rind 

Instructions

  1. Cut plum halves into 3 wedges. Set aside.
  2. Heat oil in a heavy-based frying pan over medium heat. Add onion. Cook, stirring occasionally, for 15 minutes or until softened and slightly caramelised.
  3. Add sugar. Cook, stirring, for 2 minutes or until sugar has dissolved. Add plums. Stir to combine. Add red wine, red wine vinegar, cinnamon, cloves, peppercorns, cardamom and orange rind. Bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 40 to 50 minutes or until relish has thickened. Set aside for 10 minutes.
  4. Remove and discard cinnamon stick and orange rind. Serve, or store relish in an airtight container in the fridge for up to four days.
